			<content:encoded><![CDATA[<p>On only a few days each year are conditions considered to be so perfect that the buds for this wonderful white tea can be harvested. Silver Needle is the finest and rarest of the white teas with a sweet, mellow taste and a glorious, light yellow colour. After picking by moonlight just before dawn, the downy buds are rolled into individual needles which unfurl in the pot. White teas are the least processed with the leaves simply allowed to be air dried; low in caffeine and high in healthy anti-oxidants. </p>
<p><strong>Serving tips:</strong> Take three minutes of time to achieve perfection. Use one teaspoon of leaves per person and add freshly drawn water which is hot but not boiling &#8211; around 70 degrees centigrade. Drink without milk.</p>
